Caggionetti  Caggionetti
cagionetti or calgionetti, in local dialect as "caggiunitt '", are among the most widely known and sweets from the Abruzzi region of Teramo. They present with a form similar to ravioli, golden surface, with a mass a little 'crumbly and a filling which can vary from area to area. Prepared in winter and particularly over the Christmas period, provide a filling composed of a mixture of chestnuts, honey, sugar, candied citron, grated dark chocolate, roasted and ground almonds, rum, grated lemon peel and cinnamon. Very popular also two other variants of the filling, using chickpeas or classic grape jam, also called "scrucchiata". In the traditional recipe, we shelled chestnuts, which are boiled and passed, then add the hot honey, sugar, cedar, chocolate, almonds, rum, the grated lemon peel, cinnamon and then mix all. You let the dough rest for a day. The day after the mass is prepared with a glass of white wine, one water and one for oil. A mass produced, they supply a much more subtle now cut into small handkerchiefs that, stuffed with filling, are closed in the form of ravioli and fried in abundant oil. Alternatively, the cooking can also be baked. The method of processing is done in a similar manner, and respect the traditional rules for a period of not less than 25 years, as evidenced by Rino Faranda in Teramo Gastronomy (Ed. Tercas, Teramo 1978).
